Asian Inspired Recipes
This past December, were privileged to be the first ones to enjoy the freshly harvested lettuce from our exciting new project on the farm, and rather than use it for a salad, we made lettuce the star of the show with turkey lettuce wraps. This entree is the perfect way to kick off the New Year, as besides being packed with flavour and easy to prepare, they’re healthy and low carb as well.
This easy dinner comes together in 30 minutes or less, making it faster and healthier than takeout! It has all the delicious elements of an eggroll, minus the deep-fried wrapper. It’s extremely versatile, as you can vary the amount of soya sauce and heat to your liking. If you want to add more vegetables, then adding a handful of chopped snow peas would also be delicious.
Pho, pronounced “fuh” but with a lift at the end, like you are asking a question, is the popular food most commonly associated with Vietnamese cuisine, and is a hearty noodle soup usually eaten for breakfast. This delicious, one pot dinner all made in the Instant Pot!
Often I tweak and adjust recipes, but these Thai chicken skewers marinated in coconut milk, curry and spices from The Recipe Critic turned out so perfectly that I didn’t change a thing. Except I used chicken thighs instead of chicken breast because, in my opinion, the thighs have so much more flavor. The Peanut Sauce is also easy and delicious.
