Southern Corn CasserolePrint Print Without Images
Pure southern comfort food!
2 eggs, whisked
1 cup sour cream
1 cup heavy cream
1/2 cup melted butter or liquid margarine
2 tablespoon vegetable oil
2 15 oz. cans sweet whole kernel corn, undrained (or 4 cups fresh corn plus 1/2 cup water)
2/3 cup all-purpose flour
1/2 cup yellow corn meal
3 tablespoons sugar
1 tablespoon baking powder
1/4 teaspoon salt
- Mix the wet ingredients and the dry ingredients in separate bowls, and then combine them. Add pepper and more salt to taste.
- Pour into a greased 9×13 baking dish. Top with small dabs of butter (about 3 tablespoons)
- Bake at 350 degrees for 50-55 minutes, or until golden brown and set in the middle.
