Lemon Miso Green Beans


Ingredients

Scale
  • 1.5lbs Green Beans, ends trimmed
  • 1 Tbsp Olive Oil
  • Salt & Pepper to taste

Glaze

  • 1 ½ Tbsp Miso Paste
  • 1 Tbsp Dijon Mustard
  • 1 ½ Tbsp Rice Vinegar
  • ½ Tbsp Sesame Oil
  • 1 Tbsp Honey
  • 1 Tbsp Lemon Juice
  • 1 tsp Chili Flakes

Garnish

  • Chili Flakes
  • Crispy Onions
  • Zest of a Lemon

Instructions

  1. Pre-heat oven to 375ºF.
  2. Toss green beans with olive oil, salt and pepper. Spread evenly on a sheet pan lined with parchment paper and roast for 7 mins.
  3. In a large bowl, whisk together miso, Dijon mustard, rice vinegar, sesame oil, honey, lemon juice, and chili flakes till smooth. Reserve 2 Tbsp of glaze and set aside.
  4. Add the roasted green beans to the bowl with the remaining glaze and toss to coat.
  5. Return to the sheet pan and spread evenly. Roast for 3 mins until the sauce is bubbly.
  6. Plate the beans and drizzle with the remaining sauce. Garnish with lemon zest, crispy onion and chili flakes depending on desired heat level.
