cinnamon zucchini bars

A great dessert to make with the bounty of zucchini available at Lepp Farm Market in September! The hint of cinnamon flavour and the sweet icing are a great finish to a Autumn menu, or perfect for breakfast with coffee.


3/4 cup butter, softened

1/2 cup sugar

1/2 cup brown sugar

2 eggs

1 teaspoon vanilla

1 3/4 cup flour

2 teaspoons baking powder

1 teaspoon cinnamon

2 cups zucchini, grated

2 cup powdered sugar

1 teaspoon cinnamon

2 tablespoons melted butter

1 teaspoon vanilla

2 tablespoons milk

  1. Preheat oven to 350 degrees.
  2. Cream butter, sugar and brown sugar. Add eggs and vanilla. Mix in flour, cinnamon and baking powder. Blend in zucchini.
  3. Pour into greased jelly roll pan and bake for 20-25 minutes.
  4. While baking, prepare frosting. Mix powdered sugar, cinnamon, melted butter vanilla and milk until creamy. Add more milk if necessary to get desired consistency. Cool zucchini bars and frost with a very thin layer. (Don’t worry if it doesn’t seem like enough icing, it’s perfectly sweet enough.)
  5. Cut into squares, serve, and eat!
