Fresh Fruit Dip

Back in the beginning of June, I whipped up this strawberry platter before heading off to a baby shower. Eating seasonally is so beautiful that it didn’t even need any garnish – leaving the leaves on the strawberries gave the platter enough of a contrast!

This dip comes together so quickly, you can throw it together and be on your way. It uses Marshmallow Whip (I know, but it’s so good!), cream cheese, whip cream and a little bit of Gran Marnier. Of course, that last part is optional.

You can add just a few strawberries to your mixture before blending it – they’ll break down into the dip and add a subtle rosy hue.

1 250 gm package cream cheese, room temperature
½  7 oz. jar Jet-Puffed Marshmallow Cream
1 cup whipping cream
2-3 strawberries, rinsed, dried and cut into small pieces.  (Optional, add more or less to taste/appearance)

2 Tbsp. Gran Marnier, or your favourite fruit-flavoured liqueur
OR 1 Tbsp. pure vanilla extract

In a bowl, with a hand-held mixer, beat cream cheese until smooth and no lumps remain.  Add Marshmallow Cream, liqueur or vanilla, and strawberries, and beat until smooth. Add whipping cream and beat until thickened.

Serve with fresh strawberries, or include any other fruits for dipping.
