Ingredients
¾ cup flour of choice
½ cup chia seeds
1 ¼ tsp baking powder
¼ tsp salt
¼ tsp cinnamon
1/3 cup honey
1/3 milk
1 tsp vanilla
Zest of ½ lemon
Instructions
Preheat your oven to 300F.
Begin by making your oat flour! Simply pulse approximately 1 cup of regular oats in a food processor until it has the consistency of flour.
Pour the oat flour into a large bowl and add the chia seeds, baking powder, salt and cinnamon. Mix to incorporate.
In a separate bowl mix the honey, milk, vanilla and lemon zest.
Add the liquid mixture to the dry mixture and stir to combine. The mix will be quite runny, but that’s normal! The chia seeds will create a gelatinous texture which will firm up quite nicely when baked.
Grease two mini muffin pans and fill each hole ¾ with the mixture. You can also use large muffin tins, or even doughnut pans.
Place in the oven and bake for 18-25 minutes, depending on the size of bites you’re making. They will be done when they’re golden on top and firm to the touch.
Let the mini bites sit in the pan for 5 minutes before removing and allowing to cool completely on a metal rack.
Gobble them up on their own, or my personal favourite… with a dollop of nut butter and/or jam and enjoy!
Notes
You can add whatever flavour you’d like to replace the lemon zest. I’ve used orange zest, cocoa and chocolate chips (yum!) and coconut. Get creative and mix it up to your liking!
