Description
Farmer Rob’s favorite cuisine is Mexican food and when he tried this for the first time and declared this fresh salsa even better than Pico de Gallo, I knew I had a winner. Dill pickles are having a moment and it’s a fun, trendy and healthy twist on an already delicious dip. It takes a little bit of chopping time as you want all the pieces to be in a small, evenly sized dice. Best served with tortilla chips but potato chips works too!
Ingredients

1 cup diced pickles

1 cup diced cucumber

1 cup diced red bell pepper

1 cup diced tomato

1/2 cup diced red onion

1/4 cup diced jalapeno, or more if desired

1–2 cloves garlic, minced

1 tablespoon chopped fresh dill

1/4 cup pickle brine, from the pickle jar

Juice of half a lime (optional)

Salt, to taste
Instructions
Combine all ingredients in a large bowl. It is best if you are allowed to sit for an hour beforehand for the flavors to blend.
