Ingredients
1½ cups of your favourite gin
1½ cups cooled Strawberry Rhubarb Simple Syrup (see below)
1 oz lemon juice (½ large lemon)
1 bottle (750 mL) sparkling Rose wine (my favourites are Haywire Pink Bub or Sumac Ridge Stellar Jay, could also use any sparkling wine, but the Rose gives it gorgeous colour)
1 lemon, thinly sliced
Rhubarb stalks or small strawberries for garnish
Instructions
Place the gin, simple syrup, and lemon juice in a large glass pitcher. Add the sparkling Rose, tipping the pitcher slightly and slowly letting the wine run down the side to tame the bubbling! Add lemon slices, and stir to combine. It’s best to serve this cocktail immediately so you don’t lose the fizz.
