This decadent, creamy eggnog truffle recipe is the perfect addition to your next Holiday party. Plus, it’s only 6 ingredients and requires minimal prep time.
1 cup butter
1 ½ cups white chocolate, melted
¾ cup eggnog (we recommend using Avalon Dairy eggnog)
3 Tbsp rum
2 tsp vanilla extract
¼ tsp nutmeg
2 ⅓ cups white chocolate, melted
With a handheld or stand mixer, fitted with a whisk attachment, beat the butter on medium speed until soft for about 1-2 minutes. Add melted chocolate and mix until creamy, about 1 minute, or until throughly mixed. Add the eggnog and mix on low speed just until combined. Add rum, vanilla, and nutmeg. Mix until well combined and smooth. If you find the ingredients aren’t mixing after adding the eggnog & rum, place the mixture in the microwave for 15 seconds and then whip it again.
Chill for about 30 minutes in the freezer, or until firm enough to scoop. Using an ice cream scoop, place scoops on a parchment paper layered sheet. Freeze for about 1 hour, or until frozen. You can also leave them overnight.
Dip truffles in melted chocolate and let them firm up in the fridge for about an hour. Sprinkle with nutmeg or cinnamon to serve.
