What is Miso?

Miso is a traditional Japanese paste made by fermenting soybeans with salt and a culture called kลji. This fermentation process creates deep, savory flavour while also offering beneficial probiotics, antioxidants, and essential nutrients. Ingredients

Scale
  • 1.5lbs Green Beans, ends trimmed
  • 1 Tbspย Olive Oil
  • Salt & Pepper to taste

Glaze

  • 1 ยฝ Tbspย Miso Paste
  • 1 Tbspย Dijon Mustard
  • 1 ยฝ Tbspย Rice Vinegar
  • ยฝ Tbspย Sesame Oil
  • 1 Tbspย Honey
  • 1 Tbspย Lemon Juice
  • 1 tspย Chili Flakes

Garnish

  • Chili Flakes
  • Crispy Onions
  • Zest of a Lemon


Instructions

Pre-heat oven to 375ยบF.

Toss green beans with olive oil, salt and pepper. Spread evenly on a sheet pan lined with parchment paper and roast for 7 mins.

In a large bowl, whisk together miso, Dijon mustard, rice vinegar, sesame oil, honey, lemon juice, and chili flakes till smooth. Reserve 2 Tbsp of glaze and set aside.

Add the roasted green beans to the bowl with the remaining glaze and toss to coat.

Return to the sheet pan and spread evenly. Roast for 3 mins until the sauce is bubbly.

Plate the beans and drizzle with the remaining sauce. Garnish with lemon zest, crispy onion and chili flakes depending on desired heat level.
