Sweet Potato Casserole
Is there anything more classic than a sweet potato casserole topped with ooey-gooey marshmallows on your Thanksgiving table?
Sweet Potato Casserole
Ingredients

3 cups cold mashed sweet potatoes, prepared without milk or butter
1 cup sugar
½ cup milk
¼ cup butter or margarine, softened
3 eggs
1 tsp. salt
1 tsp. vanilla extract
2 cups of mini marshmallows
Instructions
Preheat oven to 325° F.
In a mixing bowl, beat sweet potatoes, sugar, milk, butter, eggs, salt, and vanilla until smooth. Transfer to a greased baking dish and top with marshmallows.
Bake, uncovered, for 45 to 50 minutes or until golden brown and set.
