Charโ€™s Make Ahead Turkey Gravy


This, folks, is a GAME CHANGER! I made my gravy ahead of time using this technique this weekend and it was the best gravy Iโ€™ve ever made. No huge mess at the last minute. You MUST deglaze the pan and get all those tasty brown bits that are stuck to the bottom and if you donโ€™t cook with wine, use chicken broth. Basically, you are making a flavourful, condensed turkey stock.

Makes about 5-6 cups of the most delicious, golden brown gravy youโ€™ve ever tasted! If you have a big family, you can easily double this recipe.

46ย Turkey Wings
4ย carrots, rinsed and cut into big chunks
2ย onions, peeled and quartered
46ย stalks celery, rinsed and cut into big chunks
ยฝ cupย raisins
ยผ cupย grapeseed or vegetable oil

salt and pepper
2 tsp. poultry seasoning
ยฝ cupย white wine
4 cupsย chicken broth
4 cupsย water
a few thyme sprigs, optional


Instructions

In a roasting pan, toss turkey wings, carrots, onions, celery and raisins with ยผ cup grapeseed oil. ย Position the turkey wings so they are laying on top of the vegetables and sprinkle with salt and pepper and poultry seasoning.
Roast at 400 degrees for 90 minutes, turning over halfway through.
Once roasted, place turkey wings and vegetables into a large pot, adding all juices accumulated in the pan.
Place roaster on stovetop, add white wine and bring to a boil toย deglaze the pan. ย You want to take the time to scrape up all the tasty brown bits stuck to the bottom of the pan. ย Add to the pot along with turkey.
Add chicken broth and water and thyme sprigs, enough to just barely cover pot contents.
Simmer for 1-2 hours.
Strain into a smaller pot, and press out as much of the juiceย as possible, then discard the cooked vegetables. ย ย The wing meat makes excellent chicken salad sandwiches to nibble on.
Place turkey stock in refrigerator overnight to cool.ย When youโ€™re ready to make the gravy, scrape off as much of the fat that has solidifiedย on the top of the pot as you wish, or leave it all in the gravy โ€“ itโ€™s up to you!
Proceed to thicken your gravy however you normally would, using a roux of flour/water or flour/chicken broth. ย Season to taste.
