Chicken Paninis: Melty, Toasty, and Delicious!

Lepp’s Oven Roasted Chicken & Spiced Chicken is on special for Lepp Farm Family Rewards Members for $3.29/100g every Sunday in February. What better way to enjoy it than to make a melty and toasty panini with all the toppings?

Our Deli Chicken is made right here at the Market with Lepp-riased chicken. Our chicken is free-range, fed a vegetable-based diet, and raised without antibiotics, hormones, or steroids. Plus, our deli chicken is gluten-aware and nitrate-free.

We’ve put together six of our favourite panini combos to inspire you. We used a panini press, but these work just as well grilled in the pan or even broiled in the oven if you want to cook multiple at once! Just melt open-faced and squish together when they come out.

Grab a loaf of Lepp’s Bakehouse Sourdough or Focaccia, some cheese, sauce, and veggies, and you’ve got what you need for a comforting meal. Keep reading to find out our faves!

Pesto Chicken Caprese

This panini combines all your favourite flavours from a caprese salad into a gooey, flavourful sandwich. Our favourite way to layer the toppings is to start with the sauce, add your cheese and meat, then add the veggies to keep things from getting too mushy.

BBQ Chicken

This panini is inspired by BBQ chicken pizza with melty cheddar, sweet BBQ sauce and the crunch of green peppers and crispy onions. It’s the perfect balance of textures and flavours.

Chicken, Brie and Peach Jam

This one is for the brie lovers! We love pairing brie with a sweeter condiment to balance its salty flavour. We went with Salt Spring Kitchen Co.’s Peach & Pepper Spread, which paired amazingly with Lepp’s Oven Roasted chicken and the peppery arugula. This one is extra indulgent, with perfectly gooey brie and the caramelized jam.

Chicken, Bacon, Ranch

An absolute classic combo, Lepp’s Spiced Chicken & Double Smoked Bacon is paired with creamy avocado and Lepp’s ranch sauce. This panini will have you wondering if you should go for seconds!

Mediterranean Chicken

Mediterranean flavours come together in this panini with Lepp’s Spiced Chicken, Roasted Red Pepper, FUME-eh’s smoked Olive Tapenade, and creamy Havarti cheese. We made this one on Lepp’s Bakehouse Focaccia bread, and the airy bread was perfect with the rest of the flavours!

Chicken Cordon Bleu

This sandwich is inspired by its namesake, Chicken Cordon Bleu – chicken stuffed with Swiss cheese and ham. Only this time, we put those toppings between Lepp’s sourdough and added some tangy dijon mustard and Lepp’s crunchy Dill Pickles to balance the rich and creamy flavours of the cheese and meats. This one is simple, but you won’t be disappointed!

These are just some of our favourite options, but truly, the topping combos are endless. You can’t go wrong with a nicely toasted sandwich with melted cheese. We love to make these during the week for a quick dinner, where everyone can add what they like, or even for a quick afternoon lunch.
