Fraser Valley Roasted Raspberry Vinaigrette

Ingredients

1 cup fresh raspberries

2 tablespoons sugar

2 fresh mint leaves

1/2 cup balsamic vinegar

1/2 cup olive oil

1/2 teaspoon salt

1/8 teaspoon ground black pepper


Instructions

Mix 1 tablespoon sugar and fresh raspberries in a small sauce pot. Simmer for 5 minutes on low heat until mixture is juicy. Add the berry mixture and remaining ingredients to a blender or food processor and blend until smooth.
